Honestly, this soup took me 10 minutes to make and it is tasty! I have made a non-vegetarian version before: Chicken Tortilla Soup.
- Olive Oil for sauteing
- 1 onion, chopped
- 2 bell peppers, chopped (I used red and orange for more color)
- 1 jalapeno, diced (I did not have one so I used 1 tsp of jarred pickled jalapenos)
- 2 cans of diced tomatoes (I used fire roasted)
- 3 cups vegetable broth (I used low sodium and Organic)
- 10-12 oz bag of frozen corn (Organic preferred)
- 2 cans of black beans, rinsed
- 1 tsp cumin
- 1 lime, juiced
- 1 bunch of fresh cilantro, chopped (key ingredient)

Directions:
In a large pot, sautee onions, peppers, and jalapeno until soft. Add diced tomatoes (with juice), broth, corn, beans, and cumin. Bring to a boil and then simmer for 10-20 min. Add in lime juice and cilantro near the end. Serve with desired condiments, like avocado slices, tortilla chips, and shredded cheese. Makes a large pot – ok to freeze leftovers.
