Sunshine Wellness Experience

The knowledge I’ve gained from working at Sunshine Wellness is vast, I started working here over two years ago and came into it as a chef experienced in fine dining and catering but had never worked with or created gluten or dairy free menus. Although I have grown up with a family in the organic farming business and have been used to using fresh healthy ingredients, Betsy has taught me to utilize these ingredients in a different way ,whether it be special dietary needs, knowing which vitamins and nutrients are in each fruit and vegetable and ways to use those to their fullest potential, dealing with celiac disease and the right foods to give those clients, or simply just having the right diet to lead a healthy lifestyle. The list goes on and on….

I can truthfully tell you one simple thing but the most important to me that I have learned from Betsy is the way to change my own diet to have a more healthy energetic lifestyle.  In the past 5 months, I have lost 15 pounds by simply cutting out a lot of the “white foods” from my diet (white breads, white sugar, whole milks and creams, certain cheeses,white rice) and other heavily starchy products. These are just a few things I’ve learned but they are also some of the basic principles I now utilize as a chef working in the sunshine wellness kitchen.
