Sandwiches are the most common lunch for Americans…turkey, PB&J, grilled cheese, etc. If you are trying to eat healthier, here is my open faced Veggie Sandwich.
- First, pick a quality bread. My favorite Gluten-Free bread is Udi’s Whole Grain Bread. Alvarado Street and Ezeckial make wonderful sprouted grain bread (contains gluten).
- Toast the bread. Depending on how dense the bread is and your carb allowance, pick 1 or 2 slices and toast them. We are going to make an open faced sandwich. This way we can load on the veggies.
- Start with a spread. My two favorites are hummus and smeared avocado.
- Top with your favorite veggies. My staple vegetables are usually thickly sliced tomatoes, thinly sliced cucumber, spinach or lettuce, avocado, and red onions. Sometimes I also like to add a fried egg, slice of bacon or a little cheese.
