What a colorful and tasty summer salad. These ingredients should be plentiful and affordable at the farmers market (or maybe your backyard). I added cucumber and onion to this common salad to bring in some extra crunch, fiber, nutrients and flavor.
- 6 small tomatoes (4 medium)
- 1 pound fresh mozzarella (use mozz from buffalo if intolerant to cow dairy)
- 1 large cucumber
- ½ medium red onion (optional)
- 10 to 15 basil leaves
- 3 tablespoons good olive oil
- 1 tablespoon balsamic vinegar
- Sea salt
- Freshly ground black pepper
Directions:
Slice tomatoes, mozzarella, cucumbers and onions in small cubes or quarters and place in a bowl. Cut basil into thin slices and add to bowl. Toss everything with olive oil, balsamic vinegar, salt and pepper.
