Spiced Gluten Free Pasta with Veggies

spiced pasta and vegNot all gluten free pasta is created equally but there are some great options out there these days (best gluten free pastas). Feel free to make this sauce as spicy as you like and save the remaining sauce as a marinade if desired.

Sauce:

• 1/2 cup GF tamari or soy sauce
• 3 Tbs. toasted sesame oil
• 2 Tbs. real maple syrup or honey
• 1-2 Tbs. siracha or hot sauce (you decide the level of spice)
• 2 Tbs. rice vinegar
• 2 Tbs. chopped garlic (fresh or jarred)

Noodles:

• 1 large carrot, grated
• ½ medium yellow squash, grated
• ½ medium zucchini, grated
• 5 green onions, chopped (chop extra for following recipe)
• 3 servings gluten free rice noodles
• 3 Tbs. sesame seeds

Protein: Top with your favorite protein, like crushed peanuts, almonds
Optional: Marinade chicken or tofu (use organic) with extra sauce and add to noodles.

1. To make sauce, whisk together ingredients in small bowl.
2. To make noodles: Cook gluten free noodles as directed by package. Toss noodles with veggies and approx. 5 tbs. of sauce per 1 serving.
3. Garnish with sesame seeds and add protein
