This is a great recipe for families or for a single person. Utilizing a muffin tin, you can make a bunch of individual size portions of healthy meatloaf. It is a flexible recipe so have fun with it.
Ingredients:
- 1 lb lean ground turkey
- 3 cups kale
- 1 1/2 cups GF bread crumbs (or ground up old fashioned oats)
- 2 T Dijon mustard
- 1/2 T minced garlic
- 1/2 cup diced onion
- Sea salt and pepper to taste
- Optional: Roasted red peppers, sundried tomatoes or shredded carrots would be a flavorful and colorful addition. Also, if you add brown rice or beans to the recipe, each loaf can be balanced with carbs and protein and veggies.
Directions:
- Combine all ingredients except kale in a large bowl.
- Chop kale into bite sized pieces.
- Combine everything together in large bowl. Transfer to a greased muffin tin and bake in oven at 350 degrees until golden brown or until internal temperature reaches 165-170. Depending on size of loaves, it should take approximately 25-30 minutes.
