Adding cauliflower to mashed potatoes is genius. I bet you won’t be able to taste them. This recipe is also healthier because it avoids milk, cream and butter. The only dairy component is 1/2 cup of sour cream in the whole recipe. And as you know, I like SIMPLE. No need to peel the potatoes and you don’t even need a mixer with this recipe which will save time.
Ingredients
- 2 pounds red potatoes, scrubbed and halved or quartered if large
- 1 head of cauliflower, cut into similar sizes as the potatoes
- 1/2 cup sour cream
- 1/2 cup finely chopped shallots or green onions
- 1/4 cup chopped fresh parsley or 2 Tbsp of dried parsley
- 1/4-1/2 cup of vegetable or chicken broth
- Salt & freshly ground pepper to taste
Preparation
- Steam potatoes and cauliflower in a large pot until tender, 15-20 minutes.
- Meanwhile, combine sour cream, shallots/onions, parsley, broth, salt and pepper in a small bowl. Stir until smooth and set aside.
- Drain the potatoes and cauliflower. Crush with a potato masher or the back of a large spoon. Stir in the sour-cream mixture. Adjust seasonings with salt and pepper.
Serving size is approximately 1 cup. Add your favorite protein and veggie for a balanced meal.
