Mexican Topped Baked Potato

1abc-THIS-BAKEDDSC_0124I know potatoes get a bad rep but if you balance it properly, this starchy carbohydrate will absorb slowly and be a healthy choice.

Ingredients:
1 small – medium sized potato
1/4 cup black beans
1/4 cup fresh or frozen bell peppers
1/4 cup salsa
1/2 avocado (save the half with the pit inside in the fridge for later use)
1 Tbsp fresh cilantro
1/2 tsp cumin
Salt, pepper to taste

Optional: Feel free to add ground turkey, diced chicken or shredded cheese for added protein.

Directions:
Preheat oven to 350 degrees. Poke several holes in the potato around the surface and wrap in one layer of aluminum foil. Bake for approximately 30-45 minutes until soft all the way through.
Top with the rest of the ingredients (except the cilantro), and return to the oven until the rest of the ingredients are warm. Garnish with cilantro. Enjoy!
