Note: This recipe can be altered to your taste buds, or combined with the Quick Chick Salad– a great way to prevent waste and use leftovers.
Ingredients:
1/4 cup Quick Chick Salad
2 tbs. hummus (any flavor, I recommend roasted red pepper)
1/4 cup arugula or spring mix greens
1-2 corn tortillas or 1 rice tortilla
Directions: Spread hummus over warmed corn tortillas. Add Quick Chick salad and greens.
Note: Makes 1 serving
