Healthy Cookie Dough BItes
Cookie Dough that’s healthy.. GET OUT. These little cookies are super easy to make and are so good! You wouldn’t believe that they are actually not too bad for you. You could have them as a sweet treat or a snack on the go. The secret ingredient is chick peas! They make the cookies super moist just like cookie dough. Try it out!

Ingredients

  • 1¼ cups canned chickpeas, well-rinsed and patted dry with a paper towel
  • 2 teaspoons vanilla extract
  • ½ cup + 2 tablespoons natural nut butter ( I used natural peanut butter, but sun butter and almond butter are also good)
  • ¼ cup raw honey or agave
  • 1 teaspoon baking powder
  • ½ cup dark chocolate chips
  • ½ cup chopped walnuts or pecans

Directions

  1. Preheat your oven to 350°F.
  2. Combine all the ingredients, except for the chocolate chips and nuts, in a food processor or blender and process until very smooth. Make sure to scrape the sides and the top to get the little chunks of chickpeas and process again until they’re fully blended.
  3. Pour in the chocolate chips and nuts and stir.
  4. With wet hands, form into 1½” balls. Place onto a cookie sheet lined with parchment paper.
  5. Bake for about 10 minutes. The dough balls will still be very soft when you take them out of the oven.
  6. Store in an airtight container at room temperature (or in the fridge) for up to a week.
