You gotta love crock pot recipes. I threw in frozen chicken, frozen veggies, canned beans and spices…and it smelled and tasted awesome!
Ingredients:
- 2 cans white beans, rinsed
- 1 can diced tomatoes with jalapenos or chilis with juice (to add a little kick)
- 1 large onion, chopped (or 1 cup frozen chopped onions)
- 1 bell pepper, chopped (or 1 cup frozen chopped peppers)
- 8-10 oz bag of frozen corn (organic or sweet white corn preferred)
- 4 cups organic chicken broth
- Meat: 2 large chicken breasts or 1 pound ground turkey
- Spices: 2 T cumin, 2 tsp oregano, 1 tsp red pepper flakes
- Optional Toppings: cheese, sour cream, cilantro, hot sauce
Throw all ingredients into the crock pot. Cook on low for 6 hours.
