Tired of the same snacks day in & day out? These sweet potato pancakes are versatile and perfect for on-the-go snacking or a fun new side dish! You can have them with some almond butter for a sweet treat or go savory with some chicken salad.
Ingredients: (makes 6-8 pancakes)
- 1-1.5 large sweet potatoes
- 1/2 onion
- 2 eggs
- 1 Tbsp almond meal/flour
- 1/2 tsp salt & pepper
- 2 Tbsp. or more coconut oil for cooking
Directions:
- Shred your peeled sweet potato and onion. You could shred by hand or use a food processor.
- Place all your shreds on a towel and squeeze out any moisture.
- In a large bowl, mix together all the ingredients.
- Heat your coconut oil in a medium skillet over high heat.
- Use your hands to make small pancakes with the sweet potato mixture and add them to the oil, be sure not to overcrowd the pan. Cook for a few minutes on each side until golden brown.
- Remove from pan and place on a paper towel to cool.
