Sweet Potato Pancakes

Tired of the same snacks day in & day out? These sweet potato pancakes are versatile and perfect for img_2182on-the-go snacking or a fun new side dish! You can have them with some almond butter for a sweet treat or go savory with some chicken salad.

Ingredients: (makes 6-8 pancakes)

  • 1-1.5 large sweet potatoes
  • 1/2 onion
  • 2 eggs
  • 1 Tbsp almond meal/flour
  • 1/2 tsp salt & pepper
  • 2 Tbsp. or more coconut oil for cooking

Directions: 

  1. Shred your peeled sweet potato and onion. You could shred by hand or use a food processor.
  2. Place all your shreds on a towel and squeeze out any moisture.
  3. In a large bowl, mix together all the ingredients.
  4. Heat your coconut oil in a medium skillet over high heat.
  5. Use your hands to make small pancakes with the sweet potato mixture and add them to the oil, be sure not to overcrowd the pan. Cook for a few minutes on each side until golden brown.
  6. Remove from pan and place on a paper towel to cool.
