Many of you are addicted to my easy overnight oats recipe so I thought I’d offer you a different flavor. Enjoy!
Prep Time: 5-10 mins
Soak Time: Overnight
Serves: 2-3
Ingredients:
- 1 cup gluten free old fashioned oats
- 1 cup of milk (unsweetened almond & coconut milk are my favorites)
- 1 large carrot, peeled and grated (use blender if preferred)
- 1 tsp cinnamon
- 1 tsp mixed spice
- 1/2 tsp nutmeg
- 1 banana, mashed
- 1/4 cup chopped walnuts or pecans
- Optional: add chia seeds, hempseeds or flax meal for more protein, healthy fat and fiber
Directions:
Mix all ingredients together in an airtight container and store in the fridge overnight.
