The Sandwich Alternative

Sandwiches are the most common lunch for Americans…turkey, PB&J, grilled cheese, etc.  If you are trying to eat healthier, here is my open faced Veggie Sandwich.IMG_2358

  1. First, pick a quality bread. My favorite Gluten-Free bread is Udi’s Whole Grain Bread.  Alvarado Street and Ezeckial make wonderful sprouted grain bread (contains gluten).
  2. Toast the bread. Depending on how dense the bread is and your carb allowance, pick 1 or 2 slices and toast them.  We are going to make an open faced sandwich.  This way we can load on the veggies.
  3. Start with a spread.  My two favorites are hummus and smeared avocado.
  4. Top with your favorite veggies.  My staple vegetables are usually thickly sliced tomatoes, thinly sliced cucumber, spinach or lettuce, avocado, and red onions.  Sometimes I also like to add a fried egg, slice of bacon or a little cheese.
